| metadata.dc.description.resumo: | Este trabalho objetivou relatar a rotina do profissional médico veterinário na inspeção estadual de abate de frangos de corte. O estágio supervisionado foi concedido pela Agência de Defesa Agropecuária do Estado do Tocantins (ADAPEC-TO), regional de Araguaína, Tocantins e foi desenvolvido junto ao frigorífico Frango Americano, localizado na ROD: TO-126, Km 3,5, S/N, Arguianópolis-TO, na área de Inspeção de Produtos de Origem Animal, totalizando 390 horas, no período de 07 de março à 16 de maio de 2022. Dentre as atividades desenvolvidas, realizou-se o processo de fiscalização ante-mortem, post-mortem, inspeção periódica no abatedouro, ação fiscal e atos administrativos, fluxograma e verificações oficiais dos programas de autocontrole (PAC) da indústria. Durante o período de estágio, o estagiário passou por todos os setores dentro da indústria: descarregamento e pendura, insensibilização e sangria, escaldagem e depenagem, evisceração, pré resfriamento e rependura, cortes, embalagem, congelamento, estocagem e expedição. Onde, durante o estágio, pude aproveitar ao máximo essa experiência, sendo muito importante para a minha formação acadêmica e crescimento profissional. |
| Abstract: | This study aimed to report the routine of the veterinary medical professional in the state inspection of slaughter of broilers. The supervised internship was granted by the Agricultural Defense Agency of the State of Tocantins (ADAPEC-TO), regional of Araguaína, Tocantins and was developed with the Frango Americano slaughterhouse, located at ROD: TO-126, Km 3.5, S/N , Arguianópolis-TO, in the area of Inspection of Products of Animal Origin, totaling 390 hours, from March 7 to May 16, 2022. Among the activities developed, the ante-mortem inspection process was carried out, post - mortem, periodic inspection at the slaughterhouse, fiscal action and administrative acts, flowchart and official verifications of the industry's self-control programs (PAC). During the internship period, the intern went through all sectors within the industry: unloading and hanging, stunning and bleeding, scalding and plucking, evisceration, pre-cooling and re-hanging, cuts, packaging, freezing, storage and shipping. Where, during the internship, I was able to make the most of this experience, being very important for my academic training and professional growth. |
