Abstract

This report describes the activities performed in the mandatory internship, which took place in the period from March 13 to May 24, 2023, totaling 390 hours, made in the Municipal Inspection Service, a sector of the Municipal Department of Rural Production, in the area of production, control and surveillance of products of animal origin. Supervised by M.V. Elke Melo Vieira Amoury, during the internship it was possible to follow the work of the veterinarians in the permanent inspection of cattle, pig and poultry slaughterhouses, to follow the periodic inspection in products of animal origin processing establishments and to carry out administrative activities such as checking documentation, labeling evaluation, preparation of technical reports, among others. It also describes the whole process that the municipal inspection performs inside a bovine and bubaline slaughterhouse, presenting the inspection lines, the way the post mortem examination is performed and the main diseases found in each line. It was possible to follow and report a case of brucellosis bursitis, a lesion suggestive of brucellosis, showing that its presence strongly suggests the presence of Brucella spp. and its absence does not mean the absence of the disease, making evident the need for quick and reliable diagnostics in the routine of slaughterhouses, highlighting the importance of this finding and its impact on the economy and public health.
