| metadata.dc.description.resumo: | Este trabalho versa sobre o estágio curricular supervisionado realizado no Serviço de Inspeção Federal (SIF) sob número 723, localizado no Frigorífico Boi Forte na cidade de Araguaína Tocantins sob supervisão do Médico Veterinário e Auditor Fiscal Federal Agropecuário Dagoberto Machado Prata e orientado pela professora Draª Silvia Minharro Barbosa, no período de 30 de Novembro de 2016 a 10 de Fevereiro de 2017 tendo carga horária total de 424 horas. No decorrer do estágio foi acompanhado todas etapas do abate e linhas de produção industrial, bem como recebimento de animais, inspeção ante-mortem, abate, exame post-mortem, desvios para o Departamento de Inspeção Federal (DIF), maturação sanitária, miúdos, desossa, embalagem, rotulagem, expedição e acompanhamento dos monitoramentos dos programas de auto controle realizados pelo controle de qualidade da indústria. |
| Abstract: | This work is about the supervised curricular internship was conducted at Federal Inspection Service (SIF) under number 723, located at Fridge Boi Forte in the city of Araguaína Tocantins under the supervision of the Veterinary Federal Tax Auditor Agricultural Dagoberto Machado Prata and guided by the professor Silvia Minharro Barbosa, from November 30th, 2016 to February 10th, 2017 within a total workload of 424 hours. Monitoring of the programs of automatic control by the control of the quality of the industry. In the course of the internship, all stages of slaughter were attended, such as animal reception, ante-mortem inspection, slaughter, post-mortem examination, deviations for the Federal Inspection Department (DIF), sanitary maturation, deboning, packaging, labeling, dispatch and following the monitoring of self-control programs carried out by the quality control of the industry |
